How to make coquito?

Ingredients 

  • 1 can of cream coconut. 
  • 1 can of coconut milk.
  • 1 can of evaporated milk.
  • 1 can of sweetened condensed milk.
  • ½ tsp. ground nutmeg (freshly grated).
  • ½ tsp. fresh ground cinnamon.
  • 2 tsp. vanilla, or 1 vanilla bean, split and seeded.
  • 1 cup of Puerto Rico rum. 
  • ground cinnamon and cinnamon stick. 

 

Method

First, Blend the coconut cream, evaporated milk, coconut milk, and condensed milk until smooth.

Then add in the nutmeg, cinnamon, and vanilla extract. Blend once more. These are more to taste; if you think they need more, add more until you’re satisfied with the flavor.

You can stop here if you don’t want the alcohol or want to serve it to children.

If you want it with alcohol, simply add the rum.

Refrigerate it in a container or bottle for 4 to 6 hours; the longer you leave it, the more concentrated the flavors will be. Then, to finish the flavor, sprinkle with cinnamon.

How long does coquito last?

Coquito without rum will not last as long as coquito with rum; without rum, coquito will only last for a few days in the refrigerator, whereas coquito with rum can last up to 2 months.

 

Can you make a vegan version of coquito? 

Absolutely! If you are vegan and still want to enjoy this delicious drink during the holidays, the good news is that you can make coquito vegan-style by replacing dairy with coconut products.
You can combine a can of coconut milk, a can of sweetened condensed coconut milk, a can of evaporated coconut milk, a can of coconut cream, cinnamon, vanilla extract, grated nutmeg, and rum in a blender and chill in the refrigerator.

  • Sparkling water or club soda.

Method

Combine the simple syrup, lime juice, and mint in a glass and top with ice cubes. Allow for a few minutes.

In a blender or with an electric whisk, combine the coconut rum, coconut cream, and white rum.

Fill the prepared glass halfway with the mixture, then top with sparkling water or club soda, garnish with 2 mint leaves and pomegranate seeds, then serve.

 

Jamaican Peanut Punch
